Pecorino di Castel del Monte is a niche product of Abruzzo’s cheese-making tradition. This table cheese is made from raw sheep’s milk with the addition of rennet and salt. Pecorino Canestrato di Castel del Monte is a firm cheese with appealingly intense aroma and flavour, rich in fragrances reminiscent of the wild flowers found in pastures and fodder used to feed sheep. This product is unusual in that it has a waxed finish since it is coated and sealed with a layer of beeswax to preserve the typical fragrances in their entirety, while enhancing its flavour.
