Rustic tomato sauce Italian
Tomato purée is one of Abruzzo cuisine’s most traditional preserves. Even today many households bottle their own tomatoes during August and September, when the fruit is thoroughly ripe. Passata di Pomodoro San Tommaso purée is made in the same way it has been made by generations of families: the tomatoes are picked when perfectly ripe, carefully washed, blanched in boiling water, peeled and deseeded. The tomato pulp and juice are then bottled. The bottles are sealed with a cap and placed in a huge cauldron filled with water, brought to the boil then left overnight to cool. They are then ready for use. Passata rustica di pomodoro purée has a thicker texture and consistency as it is made using a special strainer with a wide mesh. With its flavour of good fresh tomatoes it can be added to a sautée of celery, carrots and onions, with prime minced meat, to make great condiment for pasta dishes.
