Italian peeled tomatoes
Peeled tomatoes are the essence of tradition and passion for tuis fruit, produced in true Abruzzo tradition. The tomatoes are picked when perfectly ripe, carefully washed, blanched in boiling water, peeled, and bottled whole. The bottles are sealed with a cap and placed in a huge cauldron filled with water, brought to the boil then left overnight to cool. They are then ready for use. Peeled tomatoes can be chopped and added to enrich the flavour and texture of sauces with mild red pepper, onion and oregano, for dressing cheese rissoles or meatballs. Chopped into smaller pieces, peeled tomatoes add extra flavour to chicken stewed with peppers and seasoned with sprigs of rosemary.
