Typical, pleasant fragrance and flavour of spicy tomato sauce with ventricina salami, hints of onion. Perfect to dress egg pasta, including chitarra, adding grated, semi-ripe pecorino cheese, and dried pasta, like paccheri, but great for pizza toppings too.
