Pan of Abruzzo
Our tour of the fine food tradition of Abruzzo must also include artisanal patisserie. San Tommaso took a leaf from grandma’s cookery book to come up with an assortment of sweet treats, a selection of Abruzzo’s best traditional confectionery. Pan D’Abruzzo is a mainstay of traditional regional patisserie, a treat for all five senses. The round shape is typical of Parrozzo or Pan d’Abruzzo cakes. At first glance this is a sweet dome of dark chocolate, poured in a sufficiently generous amounts to form a thick layer that crackles temptingly as the knife breaks into it to cut each slice. At first bite there is an explosion of the soft moist pastry with its quintessential yellow colour given by the eggs. Then comes the lovely, lingering fragrance and aroma so typical of almonds.
